Garlic Shrimp Zucchini Boats

As your oven comes up to 350 degrees F, split each zucchini in half and scoop out some of the pulp, leaving a ¼-inch rim of pulp all the way around. Those boats can go in the oven for about 20 minutes, giving you plenty of time to prep the filling of pan-seared and chopped shrimp, garlic, tomato, cheese, and the scooped zucchini pulp. All that can be cooked in a skillet, then loaded into the boats and topped with mozzarella until bubbling in the oven.

You’ll also need minced garlic, apple cider vinegar, salt, and pepper. Mix all this with ground pork, then cook it through on a skillet. Now, it’s ready for some corn tortilla shells, chopped onion, and a little cilantro for tasty tacos.

Shakshuka

Also known as Eggs in Purgatory, this one-pan dish is fit for breakfast, lunch, or dinner. Start by simmering chopped yellow onions in oil, letting them soften slightly. Next, mix in harissa chile paste, tomato paste, and minced garlic, allowing it to sizzle for about 30 seconds. Then, add diced roasted red peppers as well as crushed tomatoes, stirring it all together. Simmer it all for about half an hour, then stir in chopped parsley. To add the eggs, make a few divots in the sauce, then pour an egg into each hole. Cover the pan and cook for about seven minutes, until the eggs set.
