Fried, baked, hasselback, or loaded, it seems like there are endless ways to cook potatoes. Those spuds also make prime soup materials, so whether you prefer it hot or chilled, you’re sure to love these creamy potato soup recipes.

Creamy Potato Soup

Bacon is the secret ingredient that makes this potato soup so supremely savory. Gold potatoes are perfect for this dish, and they’ll have to be peeled and diced into small pieces so that they’ll break down easily in the soup. You’ll need to crisp several strips of bacon in a Dutch oven to get started, and when they’re done, take the bacon out, but leave in that flavorful grease. Then, add in a little butter along with chopped onion, which will need to tenderize on medium heat for a few minutes. Garlic will follow, as well as flour, which will help thicken the soup. Fluidity comes from milk, cream, and stock, and you can garnish the finished soup with bits of that bacon.

Chef Anthony Bourdain recalled that tasting this cold potato soup as a child was an eye-opening experience, and this recipe is right out of his acclaimed cookbook, Les Halles. While potatoes make up much of this soup’s substance, the addition of leeks is essential to its distinctive taste. The leeks will need to sweat slowly in butter, but be careful not to let them get too hot. After the potatoes have joined the leeks for a few minutes, add chicken stock and let it all simmer together. The soup must be pureed carefully in batches, then finished with the addition of heavy cream. While nutmeg might seem like a spice more suited for Christmas treats, it also makes the perfect seasoning when used sparingly here. This dish is meant to be served cold, but it would be fine to serve up a bowl while it’s fresh from the pot.
